Spiced Steak Kebabs with Yogurt



Kebabs are so underrated...like flossing.

Similarities between kebabs and flossing:
- it's easy
- requires minimal skill
- uses minimal accoutrements
- doesn't take much time
- we should utilize them more than we do. 


Kebabs make for a super fast dinner. Use the left-over mushrooms, onions, peppers, tomatoes, anything. Smoosh it together with any kind of meat - chicken, beef, even fish. And then stick them in the broiler for 4 minutes.

Boom.

These spiced kebabs were a hit with BF, my biggest critic. This is a perfect weeknight recipe. The yogurt sauce over a pita is a wonderful touch.




Spiced Steak Kebabs with Yogurt

TRT: 30 minutes

1 1/2 lbs sirloin steak, cut into 1 1/2 inch pieces
2 bell peppers, cut into 1 1/2 inch pieces
1 red onion, cut into 1 1/2 inch peices
1 T olive oil
2 t. ground coriander
kosher salt and black pepper
1/2 c. plain yogurt
2 T. lemon juice
4 pitas, warmed, for serving
1/4 c fresh mint leaves


Heat broiler. Toss the steak, bell peppers, and onion with the olive oil and ground coriander; season with ¾ teaspoon salt and ¼ teaspoon pepper. Thread onto 8 skewers and broil, turning occasionally, until cooked through, 6 to 8 minutes.

In a small bowl, mix together the yogurt and lemon juice.

Serve the kebabs with the pitas. Top with the yogurt sauce, mint, and hot sauce.
